Okra Patties & Remoulade Recipe

 

Tzatziki sauce

Yield approx. 24 patties ( depending on size)

Ingredients

  • 16 ounces plain Greek yogurt
  • 2 cucumbers- peeled deseeded, salted and allowed to drain 2-3 hours under refrigeration
  • 2 Tbsp. olive oil
  • ½ lemon juiced
  • 3 cloves fresh garlic minced
  • ½ Messina Hof Chenin Blanc
  • 1 Tbsp. dried dill weed
  • Salt and pepper to taste

Instructions

  1. Before mixing all the ingredients together rinse the excess salt from the cucumbers, pat them dry with paper towels
  2. Mix all the ingredients together and chill minimum one hour before serving

Remoulade

Yield 3 ½ Cups

Ingredients

  • 2 Cups Mayonnaise
  • ½ Cups Messina Hof Riesling German Mustard
  • 2 tbsp smoked paprika
  • 2 tsp Worcestershire sauce
  • 1 tsp lemon juice or dry white Messina Hof wine
  • 1 tsp tabasco sauce
  • 2 garlic clove minced
  • 2 tbsp minced red onion
  • ¼ cup ketchup
  • 2 tbsp fresh chopped parsley
  • 2 tbsp horseradish
  • ¼ cup pickle juice or white vinegar

Instructions

  1. Mix all the ingredients in a food processor until well blended.
