Take half the oil and tossed rinsed whole beets in the oil
Salt and pepper liberally
Roast at 350 degrees till a paring knife inserted penetrates easily about 45 minutes
Cool the beets and peel
Slice the beets into rounds and arrange on a platter
Drizzle with the reaming oil, season with salt and pepper
Sprinkle the fresh thyme on and garnish with crumbled goat cheese
