Roast Beets with Goat Cheese
Ingredients
- 2 pounds fresh beets
- 1 cup Olive oil
- Salt and pepper to taste
- 1 cup goat cheese crumbles
- 6-8 fresh sprigs of thyme
Instructions
- Take half the oil and tossed rinsed whole beets in the oil
- Salt and pepper liberally
- Roast at 350 degrees till a paring knife inserted penetrates easily about 45 minutes
- Cool the beets and peel
- Slice the beets into rounds and arrange on a platter
- Drizzle with the reaming oil, season with salt and pepper
- Sprinkle the fresh thyme on and garnish with crumbled goat cheese
- Enjoy with your favorite MH wine
