Roast Beets with Goat Cheese

Ingredients

  • 2 pounds   fresh beets
  • 1 cup  Olive oil
  • Salt and pepper to taste
  • 1 cup  goat cheese crumbles
  • 6-8  fresh sprigs of thyme

Instructions

  • Take half the oil and tossed rinsed whole beets in the oil
  • Salt and pepper liberally
  • Roast at 350 degrees till a paring knife inserted penetrates easily about 45 minutes
  • Cool the beets and peel
  • Slice the beets into rounds and arrange on a platter
  • Drizzle with the reaming oil, season with salt and pepper
  • Sprinkle the fresh thyme on and garnish with crumbled goat cheese
  • Enjoy with your favorite MH wine
