  • Spinach has a green, veggie, and herbal flavor. Additional greens like mustard, radish or beet give more complex vegetal flavors or spice.   Without additional seasonings on the greens, try lighter wines like Pinot Gris or Riesling.
  • If you add spice or heat in the flavors as in a salad dressing, try Gewurztraminer or Viognier.
  • If you add some fat like cheese or starch like bread, pasta or potatoes, try red wines.
