Bean Dip

Ingredients

  • 2 pounds dried beans cooked until tender
  • 1 yellow onion diced
  • 1 tbsp ground cumin seed
  • 1 tbsp oregano
  • 2 strips minced bacon
  • 2 dried chiles toasted
  • 2 bay leaves
  • 4-6 cups chicken stock

Instructions

  • Sauté the bacon and diced onion until the edges begin to brown. Add the cooked beans, mix thoroughly, and fry briefly.
  • Add the chicken stock and remaining ingredients. Cook until the beans are easy to mash.
  • Remove the dried chilies and bay leaves before mashing the beans to a creamy dip. Season to taste with salt and pepper.

Notes

Add ingredients that pair best with the wine chosen to serve with it.  Examples, add cinnamon, ginger and chili pepper for sweeter wines like Moscato.  Add sausage, Montreal seasoning and TheVineyardDistrict herb blend to create a savory flavor that pairs well with red wines like Sangiovese.
