Sweet potato casserole
as prepared by Chef Chris Shepley of The Vintage House Restaurant at Messina Hof Winery
Ingredients
- 2 lbs fresh yams
- ½ cup butter
- ½ cup toasted pecans
- 1 tsp ground cinnamon
- ½ cup brown sugar
- 1/3 bag small marshmallows
- ¼ cup Messina Hof Angel Riesling
- Salt and pepper to taste
Instructions
- Roast the yams till soft at 350F for 1 ½ hours
- Cool then peel and dice
- Mix all the ingredients together
- Pour into an oven proof pan
- Bake covered at 325F 30-45 minutes
