Wine Pairings for Dishes with Mustard Seed:
- Mustard plants not only produce seeds from which you can make mustard, but the leaves provide a flavorful leafy side dish. Different types of mustard plants produce different types of seeds which will determine the potency of the mustard you make.
- Mustards range from savory to hot & spicy to sweet to pungent. Taste the wine before pairing with the mustard. It is easy for mustard to overwhelm or conflict with the wine.
- Mustards are made with vinegar and/or wine. Semi-sweet or sweet wines are the easiest pairings. If you can match the acidity of dry wine with that of the mustard, it can work.
- Mustards are often the strongest flavor in a dish, so the wine pairing needs to be with that in mind. You can soften the mustard boldness by adding cream. Mustard cream sauces can pair nicely with reds.
- Try whites like Riesling, Gewurztraminer, or Viognier. Try medium bodied fruit forward reds like Petit Sirah or GSM.
