Wine Pairings for Greens
Think “green” wines when pairing with greens! (White wines come from green grapes.)
- Dark, leafy pungent greens like Mustard, Turnip or Collard Greens are easily interchanged in recipes.
- Collard Green carries a flavor weight that pairs nicely with wines that complement raw veggie characters (like broccoli or cabbage) like Gewurztraminer, Blanc du Bois or Dry Riesling.
- Braising Collard Greens with ham or bacon softens any bitterness and brings out more earthy flavors which can pair with soft red wines like Primitivo or blends.
- Different seasonings and spices can also be used in the dish with different flavor directions. Add garlic and onion for more savory flavors or pepper for spice. These will give the dish heavier flavor weight which can complement bigger more full-bodied reds.
